Distillation time.

Doniene Gorrondona has been distilling in an artisanal way for more than twenty years, maintaining quality and uniqueness at all times.


We distill the seeds and skins of our grapes, the best bagasse from Hondarrabi Zuri and Beltza.
After pressing, they ferment spontaneously and rest quietly in the distillery, waiting for their moment to be distilled.
We use traditional copper stills.
During the process, we extract the heart of the distillation.
In other words, the concentration of aromas, flavors, textures… the good stuff! that will define the profile of our spirits.


The artisanal distillation process can take a full day, so it is advisable to wait patiently in our tasting room, accompanied by a good txakoli or an excellent orujo.

Our white spirit is the full quality of a distillation without intervention.
The herbal and seaweed spirits acquire and reveal unique aromas and flavors, thanks to the personal selection of the ingredients by our winemaker.
